Definition of activity: under the condition of 50 ºC and pH 4.8, 1 g enzyme powder (or 1 ml enzyme solution) hydrolyzes 1% xylan solution for 1 min to produce 1 μ g xylose, and the enzyme amount is 1 xylanase activity unit

Applicable temperature: 20-60 ºC

Optimum temperature: 50 ºC

Applicable pH: 4.0-5.5

Properties: light yellow powder, produced by Penicillium metabolism. Xylanase molecules contain only one subunit. The proteins with molecular weight between 8 and 30 KD are basic proteins, and the proteins with molecular weight between 30 and 145 KD are acid proteins

Purpose: biochemical research. Xylanase is the most important hydrolase in xylan hydrolase system. By hydrolyzing the β - 1,4-glycoside bond of xylan, xylan is hydrolyzed to xylan oligosaccharide, xylobiose and a small amount of xylose and arabinose

Size mixing in the mash copper,then add Low Temperature α-Amylase,about 0.6U per g raw material,liquefy 30min at 85-90ºC.
2.Food industry
Solve the question of starch degradation in food raw material.
